Shrimp and Pesto Spaghetti Squash

I have been dying to make spaghetti squash for quite some time now. So last week I bit the bullet and bought a spaghetti squash having absolutely no idea what to do with it. After I little bit of research (on Pinterest of course) I came up with a super simple recipe to make for my family.

  • 1-Spaghetti Squash
  • 1 LB small shrimp
  • 1 TBSP Garlic
  • 2 TBSP Pesto (store bought or homemade)
  • Salt/Pepper

  • Cut off the top and bottom of the spaghetti squash and then slice it in half length wise
  • Place them cut side down in a baking dish and fill it with an inch or so of water
  • Then cook the squash in the microwave for 15 minutes or until you can easily pierce the skin with a fork
  • While the spaghetti squash is cooling, sauté the garlic in a little bit of olive oil in a skillet over medium heat
  • Add the shrimp, sprinkle with salt and pepper, and sauté until cooked through
  • When the squash is cool enough to touch, simply shred the inside with a fork
  • Add the shredded squash to the shrimp and add in the pesto
  • Toss together until fully coated and serve immediately
