Last Call

Don't get me wrong, I love a good sale, and the Nordstrom Anniversary Sale is the best of the best, but taking these photos in the ninety degree heat wearing a black sweater was less than desirable. That being said, you have until Monday to get this must have sweater for under $50! I love the length and I can't wait to throw it on over jeans and a tee as well. The dress is the perfect weight to transition into the fall, I think it'd look great with a jean jacket as well.

What I'm Reading

Sorry for the radio silence this past week. My sisters and I took a quick vacation to Las Vegas for a couple of days. Head over to my Instagram to check out some snaps of our trip! 
It's always during the summer, laying by the pool that I find myself reaching for a good book. This summer has been no different. My mom, sisters and I have been swapping our favorite books around this summer, reading any recommendations each other have. So I thought I would share with you a few of our favorites, those ones we just can't put down.

We can't get enough of Jojo Moyes lately. All of her books just have that something about them that makes you want to keep reading. The books are not a series, so you can pick which ever one interests you the most. One of my favorites so far has been The Girl You Left Behind. 

It takes place in Paris, 1916. Sophie Lefèvre must keep her family safe while her adored husband, Édouard, fights at the front. When their town falls to the Germans in the midst of World War I, Sophie is forced to serve them every evening at her hotel. From the moment the new Kommandant sets eyes on Sophie’s portrait—painted by her artist husband—a dangerous obsession is born, one that will lead Sophie to make a dark and terrible decision. Almost a century later, Sophie’s portrait hangs in the home of Liv Halston, a wedding gift from her young husband before his sudden death. After a chance encounter reveals the portrait’s true worth, a battle begins over its troubled history and Liv’s world is turned upside all over again.

A life of such extravagance, it's hard to even comprehend it at some points. This book is the perfect summer read to take your mind to another world completely. 

When New Yorker Rachel Chu agrees to spend the summer in Singapore with her boyfriend, Nicholas Young, she envisions a humble family home and quality time with the man she hopes to marry. But Nick has failed to give his girlfriend a few key details. Summer equals vacations, am I right? For some of us that is. So a book that follows a family as they take their summer vacation is just what those who aren't traveling this summer need to transport them to the vacation mindset.

Healthy Omelette Cups

I love easy grab and go breakfast options. These omelette cups are packed with protein and veggies to fill you up and jump start your morning!
  • 1 tablespoon olive oil
  • 4 whole eggs
  • 4 egg whites
  • 2 cups baby spinach - roughly chopped (measured/packed before chopping)
  • 1 cup tomato (measured after chopping)
  • 1 cup yellow onion (measured after chopping)
  • 1 cup mushrooms (measured before chopping)
  • 2 cloves garlic, minced
  • Salt, to taste

  • Preheat the oven to 350
  • Chop all the veggies to a small dice
  • Mince garlic
  • Whisk the eggs and egg whites together
  • Add the oil to a large nonstick skillet and sauté the veggies and garlic, cook through
  • Add veggies to egg mixture
  • Pour mixture into a muffin tin that is coated with nonstick spray
  • Bake for 15 minutes or until a toothpick comes out clean
  • Store in a sealed container and heat when you're ready to eat!

Blueberry Banana Bread

I made this Blueberry Banana Bread a couple weeks ago and it was a complete hit! This is a great way to use those extra ripe bananas.

  • 1 3/4 cups all-purpose flour 
  • 1 teaspoon baking powder 
  • 1/8 teaspoon baking soda 
  • 1/4 teaspoon salt 
  • 1/2 cup unsalted butter, at room temperature 
  • 1 cup sugar 
  • 2 large eggs 
  • 1/4 cup buttermilk 
  • 1/2 teaspoon vanilla extract 
  • 3 ripe bananas, mashed 
  • 1 cup blueberries

  • Recipe
  • Preheat oven to 350 degrees. 
  • Lightly coat a loaf pan with nonstick spray. 
  • In a large bowl, combine flour, baking powder, baking soda and salt. 
  • In the bowl of an electric mixer fitted with the paddle attachment, beat butter and sugar on medium-high until light and fluffy, about 2-3 minutes. 
  • Beat in eggs, buttermilk and vanilla until well combined. 
  • Beat in bananas until well combined. 
  • Gradually add flour mixture to the sugar mixture at low speed, beating just until incorporated. 
  • Add blueberries and gently toss to combine. 
  • Scoop the batter evenly into the loaf pan. 
  • Place into oven and bake for one hour, or until a tester inserted in the center comes out clean. 
  • Remove from oven and let cool for 15 minutes before inverting the cake onto a wire rack.
