Friday Finds: The Wedding

Mexican Corn Dip

A friend of mine made this Mexican Corn Dip/Salad at a party I was at a couple weeks ago and as soon as I took the first bite I knew I needed the recipe! It is a super simple dish to make and with multiple ways to serve it, it makes the perfect addition to any summer party. You can serve it as a dip with Dorito chips, or as a side salad, whatever floats your boat!

  • 2 Cans of Corn, drained
  • 2 Cups of Cheddar Cheese, shredded
  • 1/2 Cup of Mayonnaise
  • 1/2 Cup of Ranch Dressing
  • 1 Medium Bell Pepper, diced
  • 1/2 Medium Red Onion, diced
  • 1 Bag Doritos Taco Flavored Chips

  • Mix all ingredients together, except the chips, in a large bowl
  • Crush as many chips as desired and add to the mixture.
  • Serve and enjoy!

Peanut Butter Dark Chocolate Cookies

 I made these cookies over the weekend on a whim to try out the recipe. They are gluten and dairy free and only have five ingredients total. It was a super simple recipe and a hit with everyone!
  • 1 Cup of Peanut Butter
  • 1 Cup of Sugar
  • 1 Egg
  • 1 Teaspoon of Baking Soda
  • Dark Chocolate Chips

  • Preheat the oven to 325 degrees
  • Cream together all ingredients in a mixing bowl except the chocolate chips
  • Roll dough into balls (I used a tablespoon measure) and press chocolate chips into the dough
  • Place on a greased cookie sheet and bake for 8 minutes

A Day at the Flea Market

My family and I spent the afternoon at the Kane County Flea Market this past Saturday. We were there looking for pieces for my sisters upcoming wedding, but I stumbled upon this adorable American Flag while we were walking around and I had to have it. Flea markets are something that I really enjoy doing during the summer, it's fun to walk around and look at all the odds and ends and fun vintage finds. If you haven't gone to a flea market I highly suggest you add it to your summer bucket list!

Lemon Garlic Shrimp with Asparagus Couscous

It's been way too long since I've shared a recipe with you guys! So when I saw this one in our Weight Watchers Weekly booklet I knew I needed to give it a try. 

  • 4 Cups Low Sodium Chicken Broth
  • 1 Cup uncooked Whole-Wheat Couscous
  • 4 Cups Asparagus, cut
  • 2 Tsp Extra-Virgin Olive Oil, divided
  • 1 Pound Shrimp, peeled and deveined
  • 1 large Shallot, minced
  • 2 Tbsp Garlic, minced
  • 1/8 Tsp Crushed Red Pepper Flakes
  • 1 Tsp fresh Lemon Juice
  • 1 Tsp Lemon Zest
  • 3 Tbsp fresh Basil, minced

  • In a medium saucepan, bring 2 cups chicken broth to a boil over high heat
  • Add couscous and asparagus to pan; cover, reduce heat to low and cook about 8 minutes
  • Remove from heat, set aside
  • Meanwhile, in a large sauté pan, heat 1 teaspoon of oil over medium-high heat
  • Add shrimp and cook until lightly seared and cooked through, about 2 to 3 minutes per side
  • Remove from pan to a plate
  • Add remaining oil, shallot, garlic and red pepper flakes to pan; cook, stirring a few times, 1 minute
  • Add remaining 2 cups of chicken broth and scrape up any bits left in the bottom of the pan
  • Increase heat to high and cook, stirring occasionally until reduced to a thick sauce about 10 to 15 minutes
  • Add shrimp back to pan
  • Stir in lemon juice, zest and basil
  • Place a serving of the couscous onto a plate and top with a portion of the shrimp.

Serves 4. Weight Watchers 9 Points Plus per serving
