Baked Oatmeal

I made this super simple Baked Oatmeal over the weekend to eat for breakfast throughout the week. It is absolutely delicious and healthy to boot! Either eat it cold, right out of the fridge, or throw it in the microwave and enjoy it warm, it's absolutely to die for. I can't wait to try it out with different fruits in the future! 

  • 2 Cups All Natural Oats
  • 1/3 Cup Brown Sugar
  • 1 tsp Baking Powder
  • 1 tsp Cinnamon
  • 1/2 tsp Salt
  • 1 Cup Strawberries, sliced
  • 1 Cup Blueberries
  • 1 Banana
  • 2 Cups Milk, Fat-Free
  • 1 Large Egg
  • 1 tsp Vanilla


  • Preheat oven to 350 degrees
  • Spray a 10X10 casserole dish with cooking spray
  • In a large bowl, combine oats, brown sugar, baking powder, cinnamon, salt, and half the berries. Add to the casserole dish
  • In a separate bowl, combine milk, egg, and vanilla. Whisk and pour over the oat mixture, making sure the oats are soaked
  • Bake for 30-40 minutes or until firm

Makes 9 servings. 4 Weight Watchers Points Plus
