Friday Finds:Fall Edition

This weeks Friday Finds are all about fall. Maybe it's the fact the Starbucks released the Pumpkin Spice Latte this week, maybe it's the wonderfully cool mornings we've been experiencing here in Chicago. Maybe it's the football season starting up, or maybe, just maybe, it's the fact my mom has already started decorating for Halloween. I don't know what it is, but it sure is feeling like fall to me!

Chickpea and Pesto Salad with Tomatoes and Mozzarella




I threw together this simple salad to serve along side some amazing BLT's I'll be sharing with you next week. It was easy and fresh, perfect for a summer meal.

Ingredients
  • 1-15oz can Chickpeas
  • 1 Cup Cherry Tomatoes, chopped
  • 1/2 Cup Mozzarella, chopped
  • 1/4 Pesto
  • Salt and Pepper to taste


Recipe
  • Mix all ingredients in a medium bowl.
  • Chill, serve and enjoy! (Yes..it's that simple)

The Salem Inn

I just got back from a wonderful trip to Salem Massachusetts. We stayed at the most adorable B&B called The Salem Inn. If you ever find yourself in Salem, I highly recommend it! I wore this outfit the first day of our trip. It was a perfect look for the plane (which was freezing, so the cardigan came in handy) and also for a day of sightseeing. These jeans are by far my new favorite, I'll definitely be buying them in a few other colors to wear this fall.

I'm heading to Salem Massachusetts tomorrow with my sister, Jorie, and a couple friends. Jorie is an eighth grade teacher and they teach a unit on the Salem Witch Trials. She and a fellow teacher planned the trip in order to document as much as they could to bring back to share with their students. 
I get to tag along and I couldn't be more excited! I've never been to the east coast, so I'm really looking forward to it.

The weekend is finally here! I'm headed to Missouri to visit my younger sister Jesse at Mizzou. My mom and I are going to be sorority girls for a day and participate in her sororities mock recruitment as they gear up for rush next week. It's Jesse's senior year at Mizzou, so I'm glad we are able to experience this with her before she graduates. Happy weekend everyone!

Grilled Chicken with Summer Tomato and Corn Salad




My mom and I made this delicious grilled chicken after we came across the recipe in our Weight Watchers weekly meeting handout. It was super simple to make and the perfect dish for a summer night.

Ingredients

  • 1 1/2 Cups Corn
  • 1 Large Tomato, diced
  • 4 Medium Scallions, sliced
  • 1/4 Cup Cilantro, chopped
  • 1/4 Cup Fresh Lime Juice
  • 2 Tsp Olive Oil
  • 1 Tsp Ground Cumin
  • 1 Tsp Salt
  • 3/4 Tsp Paprika
  • 1 Pound Boneless Skinless Chicken Breast

Recipe

  • Preheat outdoor grill or grill pan to medium high heat
  • In a medium bowl, combine corn, tomato, scallion, cilantro, 2 tablespoons lime juice, olive oil and 1/4 teaspoon each cumin, salt and paprika
  • Combine remaining 2 tablespoons lime juice, 3/4 teaspoon cumin, 3/4 teaspoon salt and 1/4 teaspoon paprika in a small bowl
  • Rub spice mixture evenly over chicken breasts
  • Grill chicken, flipping once, until cooked through, about 8 to 10 minutes
  • Serve chicken topped with tomato and corn salad

Serves 4
Weight Watchers:6 Points Plus per serving

Fiesta Sides


Ingredients
Salad
  • 2-15oz cans Black Beans
  • 1-15oz can Corn
  • 1-15oz can Chickpeas
  • 1 Pint Cherry Tomatoes, quartered
  • 1 Avocado, diced
  • 1/4 Red Onion, diced
  • 1 JalapeƱo, diced
  • 1 Scallion, diced
  • 2 Tablespoons Cilantro, chopped

Dressing
  • 2 Limes, juiced
  • 1 Tablespoon Olive Oil
  • Salt, dash
  • Pepper, dash
  • Paprika, dash
Recipe
  • Combine all salad ingredients in a large bowl
  • In a small bowl, combine all the dressing ingredients
  • Toss salad and dressing
  • Refrigerate and serve cold



Ingredients
  • 2 lbs Plantains, thinly sliced
  • 1/4 Vegetable Oil
  • Salt, dash 
  • Pepper, dash

Recipe
  • Toss thinly sliced plantains in vegetable oil and coat well
  • Spread evenly on a baking sheet 
  • Sprinkle with salt and pepper
  • Bake at 400 degrees for 30-40 minutes (or until crispy) flipping occasionally 

I made these two side dishes to serve along with the Cuban sandwiches at my parents birthday party last weekend. They were super simple and easy to increase to feed a larger number of people.

It's a Fiesta!





 


  Over the weekend my sisters and I threw a birthday party for my parents. It was a fiesta theme complete with Cuban sandwiches, plantain chips, and churros. It turned out to be a beautiful night and everyone was able to have a wonderful time celebrating my parents. I'll be sharing some recipes Wednesday from a few of the dishes we served at the party!
