Friday Finds : A Weekend at the Lake!


I'm headed up to my boyfriends lake house this weekend, so I thought I would share with you my must haves for a weekend on the water!

1. An adorable swimsuit is a must. I wear mine from sun up to sun down!
2. I love having a light weight zip up hoodie with me. I'll throw it on over my suit when it gets chilly or when I just need a break from the sun.
3. You can't go to the lake without a hat!
4. Sunscreen is of course a must, I love the spray-on kind!
5. I'll make something simple like muffins to bring with. They are the perfect grab and go breakfast or even a snack.

Tuna Sliders






I recently found this recipe for Tuna Sliders on, where else, Pinterest and have been dying to make them ever since. They were simple and came together in a snap. 

Ingredients 
For the Sliders-
  • 2 5 oz cans of Tuna in water, drained
  • 2 chopped Scallions
  • 1 Egg
  • 1 Teaspoon Old Bay Seasoning
  • 3 Tablespoons Plain Bread Crumbs
  • Salt and Pepper to taste

For the Tartar Sauce-
  • 1/3 Cup of Mayonnaise (I used low-fat)
  • Juice from 1/2 a lemon
  • 1/2 Teaspoon Dried Dill
  • 3 Tablespoons chopped Dill Pickle (or Pickle Relish)
  • Dash of Cayenne Pepper
  • Salt and Pepper to taste

6 Hawaiian Sweet Slider Rolls
Roma Tomato
Lettuce Leaves (I used Bib Lettuce)

Recipe
For the Sliders-
  • In a large bowl combine tuna, scallions, egg, seasonings and bread crumbs
  • Mixture should be thick and hold together when formed into patties. It they do not, then add more bread crumbs.
  • Form into 6 even patties (I used an ice cream scoop)
  • On medium heat, coat a large skillet with olive oil*
  • Place patties into hot pan and cook for four minutes per side or until brown

For the Tartar Sauce-
  • Combine all ingredients in a bowl and refrigerate until ready to use


Makes 6 Sliders and 12 Tablespoons Tartar Sauce (I doubled the slider recipe, but kept the tartar recipe the same and we had the perfect amount of sauce for 12 sliders)

Nutritional Information: 
One Tuna Cake: 48 Calories, . 5 gram of Fat, 3 Carbs, .3 gram of Fiber, 8 grams of Protein 
One Tablespoon Tartar Sauce: 11 Calories, .4 grams of fat, 1 Carb, 0 fiber, 0 protein 

Weight Watchers Info: 3 Points Plus Per Assembled Tuna Slider (one cake, one tablespoon Tartar, a slice of tomato and lettuce and one King's Hawaiian Slider Roll)

*The recipe that I was using called for Land O' Lakes Sauté Express Starter, which I did use when I made mine, however, I did not like the outcome from it. It burned and clumped up in the pan. So I would suggest just using a little olive oil to cook the patties instead and adding a bit of lemon pepper seasoning to the patty mixture.

Friday Finds : Here Comes the Bride


Last weekend was a very exciting one for my family. My older sister Jorie got engaged to her boyfriend of four years, Mike! Needless to say it didn't' take long before the planning began and since then it seems that's all we can talk about! So this weeks Friday Finds are all about the future wedding, we just can't wait!

Chicken Enchilada Casserole




My sister had our family over for dinner last week. She made the most amazing Chicken Enchilada Casserole ever! It was so delicious, I had to share the recipe with you all. 

Ingredients

  • 3 Cups Red Enchilada Sauce
  • 16 Corn Tortillas, halved
  • 2 15 Ounce cans Black Beans, drained and rinsed
  • 1 15 Ounce can Whole Kernel Corn, drained
  • 6 Scallions, thinly sliced
  • 4 Cups (about 1.5 Pounds) cooked Chicken, shredded
  • 3 Cups Shredded Monterrey Jack or Mexican Blend Cheese (Fat Free for WW Points Calculation)
  • 1 Avocado, peeled, pitted and diced
  • 1/2 Cup loosely packed Cilantro

Recipe

  • Preheat oven to 375 degrees.
  • Prepare a 9X13 inch baking dish with cooking spray.
  • Pour about 3/4 cup of enchilada sauce into the baking dish, spread until the bottom of the dish is coated. 
  • Top with a layer of about 8 tortilla halves so the entire bottom of the dish is covered.
  • Sprinkle evenly with 1 cup black beans, 1/2 cup of corn and a fourth of the scallions. 
  • Then add a heaping cup of chicken and 3/4 cup of shredded cheese.
  • Repeat with a second layer of tortillas, then sauce, beans, corn, scallions, chicken and cheese.
  • Then finish with a final layer of tortillas and sauce. (Reserve about 3/4 cup of cheese to add part way through baking)
  • Cover the pan with aluminum foil and bake for 20 minutes.
  • After 20 minutes remove enchiladas from oven and top with the remaining cheese, then return to the oven (uncovered) and bake for an additional 10 minutes or until cheese is melted.
  • Top with avocado, cilantro and remaining scallions before serving. 
Serves 12.
Nutrition Info: 339 Calories, 7.2 grams of Fat, 32.6 Carbs, 7.5 Fiber, 36 Protein
Weight Watchers: 8 Points Plus per Serving

Baby Shower and a Collaboration

Some of you might know, I use to work at Vintage Charm for quite a few years. Recently I was asked to start blogging for them and it's been a great opportunity! This past weekend I had three events to attend, a grad party, wedding and baby shower. I ran over to Vintage Charm last week to look for a new outfit for one of the events, but ended up with something for all three! There are so many fabulous dresses in the store right now it was easy to find some that I liked. I chose this breezy maxi dress for the baby shower that I went to on Sunday. I dressed it up with a pair of beautiful statement earrings, a dainty gold necklace and a colorful beaded clutch.

Blueberry Banana Muffins with Flaxseed





My boyfriend is leaving for a fishing trip tomorrow with a couple of his friends. I thought these muffins would be the perfect thing to send along with them on their trip! An easy on the go breakfast to grab while they are heading out the door. If the batter is any indicator, these muffins are delicious!

Ingredients

  • 1 cup Whole-Wheat Flour
  • 3/4 cup All-Purpose Flour
  • 1/4 cup ground Flax Seed
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 1/2 cup (1 Stick) unsalted butter, room temperature
  • 1/3 cup Granulated Sugar
  • 1/3 cup Light-Brown Sugar, packed
  • 2 Large Eggs
  • 2 Ripe Bananas
  • 1/3 cup Milk
  • 1 teaspoon Vanilla Extract
  • 1 cup Blueberries

Recipe

  • Preheat oven to 375 degrees
  • Line a 12 cup muffin pan with paper liners (or grease pan if you are not using liners)
  • In a bowl, whisk together flours, flaxseed, baking soda and salt
  • In a large bowl, beat butter and sugars with a mixer until light and fluffy
  • Add eggs one at a time, beating well after each addition
  • In another bowl, mash bananas, then stir in vanilla
  • With mixer on low, alternate adding flour mixture and banana mixture into the butter mixture (beginning and ending with flour mixture). Mix until combined.
  • Stir in blueberries
  • Divide batter evenly among muffin cups
  • Bake 25 to 28 minutes, rotating pan halfway through
  • Let cool for 10 minutes in pan, then 10 minutes on a wire rack
Nutrition Information: 150 Calories, 6 grams Fat, 17 Carbs, 2 grams Fiber, 3 Protein
Weight Watchers: 4 Points Plus per Muffin
