Friday Finds : Outdoor Cinema

Baked French Toast






Here is one of the final recipes from our Mother's Day Brunch a few weeks ago. This Baked French Toast from The Pioneer Woman was a total hit! It was super easy to prepare, you make it the night before and just pop it in the oven in the morning! 

Ingredients
For the French Toast
  • 1 loaf crusty Sourdough or French Bread
  • 8 whole Eggs
  • 2 Cups Whole Milk
  • 1/2 Cup Heavy Whipping Cream
  • 3/4 Cup Sugar
  • 2 Tablespoons Vanilla Extract
For the Topping

  • 1/2 Cup All-Purpose Flour
  • 1/2 Cup firmly packed Brown Sugar
  • 1 Teaspoon Cinnamon 
  • 1/4 Teaspoon Salt
  • 1 Pinch Nutmeg
  • 1 stick cold Butter, cut into pieces


Recipe
  • Grease a 9X13 inch baking pan with butter.
  • Tear bread into chunks (or cut into cubes) and evenly distribute in the pan.
  • In a medium sized bowl mix together eggs, milk, cream, sugar and vanilla. 
  • Pour mixture evenly over the bread.
  • Cover tightly and store in the fridge for several hours or overnight.
  • In a separate bowl, mix flour, brown sugar, cinnamon, salt and nutmeg.
  • Add butter and cut it into the dry ingredients until the mixture resembles fine pebbles. 
  • Store in a Ziplock bag in the fridge.
  • When you're ready to bake the casserole, preheat the oven to 350 degrees.
  • Remove casserole from the fridge and sprinkle crumb mixture over the top.
  • Bake for 45 minutes for a softer, more bread pudding texture. Bake for one hour or more for a firmer texture.

Dark Chocolate Raspberry Pie Bars



These Dark Chocolate Raspberry Pie Bars were an absolute hit at our Mother's Day brunch. I adapted slightly from this recipe and they turned out perfect. I kept them cool in the fridge until we were ready to serve. 

Ingredients 
  • 2 Sticks Unsalted Butter, Softened 
  • 2 Cups All-Purpose Flour
  • 1/2 Cup Light Brown Sugar, Packed
  • 1/4 Teaspoon Salt
  • 1 Cup Dark Chocolate Chips
  • 1 Cup Mini Semi-Sweet Chocolate Chips
  • 1 Can (14oz) Sweetened Condensed Milk
  • 2 Pints Fresh Raspberries, Semi Crushed
Recipe
  • Preheat the oven to 350 degrees.
  • Spray a 9 X 13 inch baking dish with non-stick cooking spray. Set aside.
  • In a large bowl, using an electric or stand mixer, mix butter until creamy. 
  • Mix in brown sugar, flour and salt and continue mixing until crumbly. 
  • Press 1 3/4 cup of crumb mixture into prepared baking dish. Set remaining crumbs aside.
  • Bake for 10 to 12 minutes or until lightly golden. Remove from oven. 
  • While crust is baking, pour sweetened condensed milk into a small sauce pan and add one cup of dark chocolate chips. 
  • Stir over low heat until chocolate is melted and mixture is smooth.
  • Pour mixture over warm crust.
  • Sprinkle remaining crumbs evenly over chocolate layer. 
  • Spoon raspberries over the crumb mixture and top with one cup of mini chocolate chips. 
  • Bake for 20-25 minutes. Let cool before cutting into bars.

Tied the Knot

This past weekend was a very exciting one for my family. With me, my sisters and the best man and maid of honor from their first wedding, my parents got remarried! We all went into the city and they were married in a quick ceremony at the court house. Afterwards we headed over to The Gage for brunch after stopping in Millennium Park for a few photos. It was an absolutely perfect day!

Asparagus Frittata




This Asparagus Frittata was an absolute hit at our Mother's Day brunch! My grandparents brought us fresh Michigan Asparagus and this frittata was the perfect showcase for them. The recipe was relatively simple to make, but the best part was how quick it was to prepare! 

Ingredients 
  • 6 Eggs
  • 2 Tablespoons Whipping Cream
  • 1/2 Teaspoon Salt
  • 1/4 Teaspoon Pepper
  • 1 Tablespoon Olive Oil
  • 1 Tablespoon Butter
  • 12 Ounces Asparagus, trimmed, cut in to 1/2 inch pieces
  • 1 Tomato, seeded, diced
  • 3 Ounces Fontina 


Recipe 
  • Preheat broiler
  • Whisk eggs, whipping cream, salt, and pepper in a medium bowl
  • Heat oil and butter in a 9 1/2 diameter ovenproof skillet over medium heat
  • Add asparagus and sauté until crisp-tender, about two minutes
  • Raise the heat to medium-high
  • Add the tomato and a pinch of salt and sauté two minutes longer
  • Pour the egg mixture over the asparagus mixture and cook for a few minutes until eggs begin to set
  • Sprinkle on cheese
  • Reduce heat to medium-low and cook until the frittata is almost set but the top is still runny, about two minutes
  • Place the skillet under the broiler until the top is set and golden brown, about five minutes
  • Let the frittata stand about two minutes before cutting to serve, enjoy!

I hope you all had a fabulous Mother's Day weekend! The weather here was absolutely perfect until late Sunday afternoon, so we were able to enjoy a lot of time outdoors. Instead of spending Mother's Day in a crowded restaurant, we opted to make brunch at home. It turned out fabulous. We ate outside on the patio and took our time enjoying each others company. I'll be sharing a few recipes from our brunch over the next few weeks here on the blog. For now heres a look at what I wore on Mother's Day, and of course I couldn't leave out my beautiful mother!

Spring has finally sprung here in Chicago and I couldn't be more thrilled! I'm planning on spending as much time as I can enjoying the weather outdoors with family and friends. Last weeks Friday Finds was all about gifts for mom, this weeks is the last minute necessities for the perfect Mother's Day Brunch. Simple Fish Tacos





Happy Cinco de Mayo everyone! Not that I need an excuse to eat Mexican food, it's my all time favorite! This weekend I definitely celebrated Cinco de Mayo to the fullest. Friday night I had delicious enchiladas, Saturday I went out to dinner with my Aunt and sister to our local Mexican restaurant where I'm pretty sure I ate enough chips and salsa for my whole lifetime. Today I ran the Cinco de Miler (a 5 mile race) where we were not only serenaded with a mariachi band at mile two, but the post race celebration included Pinatas, Corona and Churros! If that wasn't enough, my dad has been away on a fishing trip on Lake Erie and he returned home today with fish in hand. So we whipped up these simple, delicious fish tacos for dinner. 

Ingredients
  • Fish (we used fresh Walleye, but any type will work)
  • Corn Tortillas
  • Avocado
  • Shredded Cabbage
  • Lime
  • Salsa
  • Old Bay Seasoning
Recipe
  • Marinate fish with Old Bay Seasoning in a ziplock bag and place in the fridge for a few hours.
  • Toss shredded cabbage with lime juice.
  • Cook fish. (We sautéed ours, but you could grill it as well)
  • Assemble the tacos with all the fixins' and enjoy!

Friday Finds:Mother's Day

May is finally here and that means Mother's Day is right around the corner. This edition of Friday Finds is all about Mom!

1. Any mom I know would love a good old fashion breakfast in bed. Whip up these easy Strawberry Shortcake Donuts to satisfy her sweet tooth!
