Peach-Raspberry Cobbler

I made this fabulous Peach and Raspberry Cobbler a few weeks back when I was up to my ears in fresh Michigan peaches. It was simple and easy and Weight Watchers friendly! This cobbler recipe will work with any fruit you have, fresh or frozen.
  • 6 Medium Peaches, skinned, pitted, thinly sliced
  • 3 Tbsp Powdered Sugar
  • 1 Cup Raspberries
  • 3/4 Cup All-Purpose Flour
  • 3 1/2 Tbsp sugar, divided
  • 1/2 Tsp Baking Powder
  • 1/4 Tsp Baking Soda
  • 1/4 Tsp Salt
  • 3 Tbsp Butter, cold
  • 1/3 Light Sour Cream
  • 1 Tsp Vanilla Extract
  • Preheat oven to 350 degrees
  • Place sliced peaches in a medium bowl, toss with powdered sugar until dissolved
  • In an 8 inch square baking pan, arrange peaches and top with raspberries
  • In a large bowl, combine flour, 3 tablespoons of sugar, baking powder, baking soda, and salt
  • Cut butter into flour mixture and work in with a fork or pastry cutter until flour resembles course crumbs
  • Add sour cream and vanilla, mix with a fork until dough comes together
  • Place clumps of crumbs evenly over fruit
  • Sprinkle with remaining 1/2 tablespoon of sugar
  • Bake until top is golden brown and fruit begins to bubble, about 40-45 minutes. Cool 10 minutes before cutting and serving

  1. Would I be correct in assuming 1/3 CUP sour cream? Looks yummy.

  2. Yes 1/3 Cup! I'm so sorry for the typo! This is a delicious recipe, I hope you enjoy it!
