Simple Fish Tacos

Happy Cinco de Mayo everyone! Not that I need an excuse to eat Mexican food, it's my all time favorite! This weekend I definitely celebrated Cinco de Mayo to the fullest. Friday night I had delicious enchiladas, Saturday I went out to dinner with my Aunt and sister to our local Mexican restaurant where I'm pretty sure I ate enough chips and salsa for my whole lifetime. Today I ran the Cinco de Miler (a 5 mile race) where we were not only serenaded with a mariachi band at mile two, but the post race celebration included Pinatas, Corona and Churros! If that wasn't enough, my dad has been away on a fishing trip on Lake Erie and he returned home today with fish in hand. So we whipped up these simple, delicious fish tacos for dinner. 

  • Fish (we used fresh Walleye, but any type will work)
  • Corn Tortillas
  • Avocado
  • Shredded Cabbage
  • Lime
  • Salsa
  • Old Bay Seasoning
  • Marinate fish with Old Bay Seasoning in a ziplock bag and place in the fridge for a few hours.
  • Toss shredded cabbage with lime juice.
  • Cook fish. (We sautéed ours, but you could grill it as well)
  • Assemble the tacos with all the fixins' and enjoy!
