Simple Granola


I use to love having parfaits for breakfast, but when I started Weight Watchers over a year ago I realized how high in point values granola could be! So I adapted a couple recipes and came up with this simple and easy granola recipe that I love. Add a couple tablespoons to a bowl of greek yogurt and fruit, it's delicious! 

  Ingredients 
  • 5 Cups Old Fashioned Oats
  • 4 Cups Special K Original Cereal, crushed
  • 1/2 Cup butter
  • 1/2 Cup + 2 Tbsp Brown Sugar
  • 1 Tsp Kosher Salt
  • 1/2 Cup honey
  • 1 beaten egg white
  • 1 cup sliced almonds, or any dry roasted nut you prefer
  Recipe
  • Preheat oven to 300 degrees
  • Line a baking sheet (15 X 11) with parchment paper
  • Mix all ingredients, except egg white, in a large bowl until evenly distributed
  • Add egg white and combine
  • Spread mixture on baking sheet in an even layer
  • Bake for 20 minutes
  • Turn off oven and allow granola to cool completely while still inside oven
  • Break into pieces and enjoy!
Makes 10 cups. 

Nutritional Info: 1 Cup, 393 Calories, 65 Carbs, 13 Fat, 10 Protein, 5.6 Fiber 
Weight Watchers: 11 points for 1 cup. I only use 2 tablespoons to add crunch to a parfait and thats only 1 point!
