Cranberry Bliss Bars

There are traditions this time of the year that I must do in order for it to really feel like Christmas time. For some reason a lot of those traditions happen to revolve around food... These Cranberry Bliss Bars are one of those traditions. They are a skinny version of the Starbucks treat and let me tell you, you won't be able to tell they've been altered at all! 
For the bar:
  • 2 cups all purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground cinnamon
  • 2/3 cup granulated sugar
  • 2/3 cup brown sugar, unpacked
  • 1/4 cup melted unsalted butter
  • 2 large egg whites
  • 1/4 cup unsweetened applesauce
  • 2 teaspoons vanilla extract
  • 2/3 cup white chocolate chips
  • 2/3 cups dried cranberries, chopped
For the frosting:
  • 8 oz reduced fat cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla extract 
  • 2 oz white baking chocolate, melted
  • 1/3 cup dried cranberries, chopped

  • Preheat over to 350 degrees
  • Spray a 9X13 inch non-stick baking pan with cooking spray
  • In a large bowl, combine flour, baking soda, salt and cinnamon, stir to combine
  • In a separate bowl, whisk the sugars with the butter, egg whites, applesauce and vanilla until light and fluffy
  • Whisk the dry ingredients into the wet ingredients in two batches until the batter is very well blended (If the batter looks "crumbly" instead of smooth, add a drop of water at a time(ONLY if needed) until is smooths out)
  • Fold in the white chocolate chips and cranberries
  • Press the batter into the prepared baking pan evenly
  • Bake for 10-14 minutes, until edges are light brown and a toothpick comes out clean. (Don't over bake or the bars will become dry)
  • Let bars cool completely 
  • In a large bowl, use an electric mixer to beat the cream cheese, powdered sugar and vanilla until well blended
  • Frost the bars and sprinkle with chopped cranberries 
  • Melt the baking chocolate and drizzle over the bars
  • When the chocolate sets cut the bars into 15 squares (5 cuts by 3 cuts), then cut each square in half diagonally to create triangles 
  • Store in the refrigerator until read to serve!

149 calories, 5 grams fat, 2 grams protein, 24 grams carbs, 0 grams fiber, 17 grams sugar

So I thought I'd keep in the spirit of St. Nick's day and show you a few of my favorite cozy finds!

Cranberry White Chocolate Cookies

I made these cookies for Thanksgiving and they were a total hit! They were the perfect size to just pop in your mouth (which was a little dangerous). The cookie base was simple and delicious, I can't wait to try it with different mix-ins! 

  • 3/4 cup unsalted butter, room temperature
  • 3/4 cup dark brown sugar
  • 1/4 granulated sugar
  • 1 large egg, room temperature
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons cornstarch 
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup white chocolate chips
  • 3/4 cup dried cranberries

  • In a large bowl using a hand mixer or stand mixer with paddle attachment, beat butter for 1 minute on medium speed until smooth and creamy
  • Add the brown sugar and granulated sugar and mix on medium high speed until fluffy and light in color
  • Beat in egg and vanilla on high speed
  • In a separate bowl, whisk the flour, cornstarch, baking soda and salt together until combined
  • On low speed, slowly add the dry ingredients to the wet ingredients until combined (the cookie dough will be thick)
  • Mix in the white chocolate chips and dried cranberries (don't over mix)
  • Cover the dough tightly with foil or plastic wrap and chill for a least two hours or up to two days (chilling the dough is mandatory for this recipe)
  • Remove cookie dough and allow to sit at room temperature for 10-30 minutes (until you can scoop it)
  • Using a tablespoon measure, scoop cookie dough and roll into balls 
  • Bake at 350 degrees for 10-12 minutes
  • Allow cookies to cool on the cookie sheet for 5 minutes 
  • They will look extremely soft when you remove them from the oven
  • If they are too puffy, gently press them down with the back of a spoon

Hey everyone! I hope you all had a wonderful Thanksgiving. The holiday's are officially in full swing! And on that note, over the next few weeks I'm going to share with you some easy holiday outfits for any occasion. 
I wore this outfit in particular on Thanksgiving. I absolutely love layering, especially with turtlenecks, it gives an outfit that extra something. I highly suggest these turtlenecks from Old Navy, since they are so lightweight.
